Golden Rum Cake with Rum Glaze

Golden Rum Cake
2 3/4 cups sifted cake flour
3 1/2 teaspoons baking powder
1 teaspoon salt
2/3 cup soft shortening
1 1/2 teaspoons vanilla extract
1 1/2 cups sugar
3 eggs
1 cup milk
1 (5.1oz.) box vanilla instant pudding
1/2 cup rum
Sift together: flour, baking powder and salt then add dry pudding mix. Cream shortening, vanilla and sugar until light and fluffy. Add eggs one at a time, and beat thoroughly. Add dry ingredients alternately with milk and mix well. Add rum, mixing well after each addition.
Bake in a 10" Shallow Dutch Oven, oiled on the bottom and sides, room temperature D.O.
12 coals on top and 5 coals on the bottom, just around the perimeter,bake for 30-35 minutes. It's done when it starts pulling away from the sides.
Cool 15 minutes in the D.O. then cool on a rack, then place on a serving plate and prick top and glaze with rum glaze.

Rum Glaze
1/4 lb. butter
1/4 cup of water
1 cup granulated sugar
1/2 cup of rum
Melt butter in sauce pan, stir in water and sugar, boil 5 minutes stirring constantly. Remove from heat. stir in Rum, while still hot drizzle and smooth glaze evenly over the top and sides, allow cake to absorb glaze, repeat until glaze is used up.
Cool for about 1 hour and enjoy
