Trailhead Kitchen Breakfast

1/2 lb. bacon
1/2 lb. sausage
2 green peppers
Handfull of small red, yellow & gold peppers
1 cup sliced mushrooms
2-3 cloves chopped garlic
4 or 5 potatoes shredded
12 eggs
1 cup of shredded pepperjack cheese
1 cup of shredded cheddar cheese


Fry 1/2 lb. bacon and 1/2 sausage add  all the chopped peppers, mushrooms and garlic and saute together until tender.  Remove from 12" D.O. and set aside.
Fry potoatoes until crispy on both sides
Stir in meat & pepper mixture.
Stir up the eggs in a seperate bowl and pour them over everything
Cook 20 - 30 minutes with 10 coals on bottom and 15 coals on top.
When it is done, put the cheese mixture over top and put the lid on to melt
This serves a bunch
