Sweet & Sour Pork

Season a 2-3 lb. pork roast with salt and pepper and garlic powder, brown on all sides in a 10” Dutch Oven, preheat oven with 15 coals underneath and 15 coals on top. Put the lid on and cook for about 20 minutes or it reaches 160 degrees. Take meat out and let it rest for 10 -15 minutes, then chop into bite sized pieces. From the list below put in the peppers & garlic and sauté for 5 minutes with the meat, then add the rest of the liquid ingredients into another pot and heat until the brown sugar dissolves, then combine the rest of the liquid ingredients with the meat and simmer for 20 minutes.

Liquid ingredients

½ cup water

½ cup honey

½ cup BBQ sauce

½ cup molasses

¼ cup Worcestershire sauce

½ cup Ketchup

2 teaspoons liquid smoke

½ cup brown sugar

1 bell pepper diced

3 vine sweet mini peppers (red-yellow-gold) chopped

2 large cloves garlic minced

1 teaspoon salt

1 teaspoon pepper

1 tablespoon smoked paprika

½ cup crushed pineapple plus all the juice

½ cup soy sauce

Serve over rice
