1 3-4 lb. Pork Butt
10-12 tomatillos
3 6 oz. cans of chopped green chilies
5 smashed cloves of garlic
Salt & pepper
Smoked paprika
Season pork butt with salt, pepper and smoked paprika
Pre-heat 12” dutch oven…15 coals on top and 15 coals underneath, then oil bottom of dutch oven, sear the pork. Let pork cook for 15 – 20 minutes.
While pork is cooking:
Take husks off tomatillos, then slice the stem off and quarter them up and put into a bowl with the green chilies and the garlic and mix all together and lightly salt & pepper.
Pour this over the pork in the dutch oven and cook for 1 hour, then remove the pork and chop into bite size pieces and return to the pot and cook for 1 more hour with 12 coals on top and 12 coals underneath.
