Vegetable Beef Soup with Barley
1lb Beef
4-5 medium potatoes peeled and chopped
5 Cloves Garlic chopped
7-10 small garden fresh carrots sliced
4 Anaheim peppers chopped
2 green bell peppers chopped
2 red bell peppers chopped
½ cup of rinsed barley
10” D.O. ½ full of beef broth
Salt & Pepper to taste
Cook beef of your choice in a D.O. for 2 hours; cool and chop into bite sized pieces then put into beef broth and cook for 15-20 minutes at a boil. Then sauté the garlic, all the peppers and add these to the pot. Now add the potatoes, carrots and barley and cook for 1 hour.
